Alternate Vegetables to the ones listed below will do just as fine. Choose your favourite market fresh vegetables remembering to select various colours and textures to keep the dish exciting and interesting to eat.
1 batch Basic Risotto recipe
100 gms sliced Button Mushrooms
100 gms Shitake Mushrooms
1 Butternut Pumpkin

Fry onion and garlic on low heat for 2 minutes ( don't skimp on the olive oil ), throw in the ginger, chilli and Corriander stalks and root and fry together for another 2 minutes.
Now, just chuck in the Vegetables and fry together for 1 minute on high heat, remove everything to a tray in a hot oven and leave to roast for 1/2 hr ( depending on the vegies )
Garnish with the remaining corriander. Goes great with my Chicken with Tea and Garlic
