Aromatic Vegetables Cooked with Garlic, Ginger, Chilli and Thai Herbs and Spices Difficulty Factor: Easy Cooking Time: 40 min Serves: 4 1 batch Basic Risotto recipe 100 gms sliced Button Mushrooms 100 gms Shitake Mushrooms 1 Butternut Pumpkin Fry onion and garlic on low heat for 2 minutes ( don't skimp on the olive oil ), throw in the ginger, chilli and Corriander stalks and root and fry together for another 2 minutes. Now, just chuck in the Vegetables and fry together for 1 minute on high heat, remove everything to a tray in a hot oven and leave to roast for 1/2 hr ( depending on the vegies ) Garnish with the remaining corriander.
