This delicious dish can be served for Brunch, Lunch or Dinner. Chop and change the ingredients for varoius versions, Chinese Pork, Vegetable or simply the Duck or the Crab on their own if you like.
10 Eggs
200ml Cream, (Milk will do but cream is best)
1 Carrot, cut into thin matchstick size strips ( Julienne )
2 Zucchini, one Yellow & one Green, cut the same as the carrot
1 punnet Oyster Mushrooms
1 punnet Shitake Mushrooms
1/2 bunch Corriander, roughly chopped ( include well washed root )
1/2 bunch Vietnamese Mint, roughly chop leaves
1/2 Peking Roast Duck, meat picked off the bone and cut into strips
100 gms Fresh Crab meat
2 teaspoons Chilli Jam
6 teaspoons Hoi-sin Sauce
