Serves: 4 ( starter portion )
A spicy Prawn dish that can be served as a Starter, Main course or Canapé
12 large Green Prawns - peeled
4 cloves Garlic
2 Red Chili
2 Green Chili
1/2 Bunch Coriander
1/2 Bunch Vietnamese Mint
Knob Ginger - peeled
4 Tbs. Sesame Oil
1 Pinch Star Anise - ground in spice grinder
Juice of 1 Lime

In a food processor blend the Garlic, Chili, Ginger, Star Anise, Coriander and Sesame Oil for a few minutes or until it forms a paste.
Mix the Chili paste and Prawns together and leave to marinate for a few hours ( over night is ideal )
In a pre heated Wok gently stir fry the Prawns until just about cooked, add the Vietnamese Mint Leaves and squeeze the Lime Juice over the Prawns.
Season with Soy sauce and Mill Pepper and serve with Noodles, Salad or Rice.
